Thomas probably appears in the North Tawton census of 1800 as "THOS WILLKAY occupation SHOPKEEPPER age 28"
There is also a Thomas Wilkey from North Tawton who gets indented as an apprentice to a tailor in 1781, but this seems unlikely. I can find no other record of a Thomas Wilkey being baptised in North Tawton between 1755 and 1780, which suggests that I have not seen all the records, and thus the details here may not be our Thomas.
